Salt–Roasted Louisiana Shrimp with Orange-Honey Dipping Sauce

Ingredients

20 each - Louisiana Shrimp, 16-20 count, whole, head on
2 cups Fresh orange juice
2 Tbsp. Orange zest
½ cup Honey
1/3 cup Green onion, minced
1 tsp. Original TABASCO® brand Pepper Sauce
1 Tbsp. Low-sodium soy sauce
2 lbs. Kosher or rock salt

Directions

Dipping Sauce

Mix orange juice, zest, honey, green onions, TABASCO®  and soy sauce; hold aside.         

Salt Bed and Louisiana Shrimp

Place ½-inch thick layer of salt on sheet pan or ovenproof dish. Place in 475°F oven for 30 minutes. (Salt can be used more than one time.)
Carefully remove salt dish from oven, lay shrimp on salt, cover with foil and place back in oven for 5 minutes.
Remove shrimp from salt with tongs, place on serving plates and serve each with 2 oz. ramekin of Orange-Honey Dipping Sauce. (Guests will detach the heads, peel the shells and dip the shrimp into the sauce.)
