Chef Amara Enciso 2022 Juno Brava Food Chef Amara Enciso is the chef and owner of BRAVA Food, which offers luxury dining experiences in partnership with The Jorgenson House in Juneau, Alaska. Amara’s culinary influences stem from traditional Mexican cuisine from La Piedad, Michoacán, Tijuana, and her hometown of San Diego, where she worked in numerous bakeries and restaurants before settling in Alaska. Amara specializes in preparing Alaska seafood and prioritizes the sourcing of fresh and sustainable ingredients native to southeast Alaska. When she’s not cooking or traveling, you can find her fishing and foraging in Juneau’s lush landscape. Amara is thrilled and deeply honored to represent the beautiful state of Alaska at GASCO with her trusted sous chef and friend, Christine Southall.
