Peppered Louisiana Blue Crab

Servings: 6, 275 Calories per serving


½ cup Sesame seed oil
2 Tbsp. Black pepper, coarsely ground
1 Tbsp. Cayenne pepper
1 Tbsp. Jalapeño pepper, seeded, fine dice
½ cups Garlic, chopped
1½ cups - Sweet chili sauce
12 each Louisiana Blue Crabs, steamed whole
3 cups Clam juice
¾ cups Flat-leaf parsley, chopped


Cut the steamed, hot Louisiana Blue Crabs in half and place in a bowl.
Heat a large saute pan over medium-high heat; add sesame oil, black pepper, cayenne pepper and jalapeno pepper. Cook for 30 seconds.
Add the garlic and stir for another 30 seconds.
Add the sweet chili sauce, stirring in for another 30 seconds.
Add the clam juice and bring to a boil.
Pour the boiling mixture over the Louisiana Blue Crabs a little at a time; toss and repeat until all of the mixture has been has been added. Garnish with parsley.
