Ingredients

32 fresh Louisiana oysters on half-shell

Cucumber Mignonette

1/4 cup diced cucumber
6 Tbsp. minced shallot
1 cup rice wine vinegar
1/2 tsp. ground white pepper

Traditional Mignonette

3/4 cup minced shallot
1 cup red wine vinegar
1/2 tsp. ground white pepper

Green Apple Mignonette

3/4 cup diced Granny Smith apple
6 Tbsp. minced shallot
1 cup Champagne vinegar
1/2 tsp. ground white pepper

Directions

Oysters

Arrange oysters on a serving platter filled with crushed ice, and serve with Cucumber Mignonette, Traditional Mignonette, and Green Apple Mignonette, if desired.
