Catfish Almondine

This healthy, classic Louisiana Seafood dish has a fresh lemon-garlic sauce and is ready in less than 30 minutes. It’s also great with fresh Louisiana trout.

Ingredients

2 Tbsp. butter
1 lb. Louisiana catfish fillets, cut into 4 portions
1/4 cup slivered or sliced almonds
2 Tbsp. lemon juice
1 Tbsp. fresh parsley, chopped
2 cloves garlic, minced
3/4 cup panko bread crumbs (optional)
Salt, pepper, garlic powder and all-purpose seasoning (or Tony Chachere’s Creole Seasoning) to taste

Directions

Preheat oven to 350ºF.
Spray a baking dish with non-stick cooking spray.
Season catfish fillets, place catfish in baking dish and top with lemon juice, garlic, almonds, parsley and butter.
If using Panko bread crumbs, sprinkle over top of fish and spray with cooking spray.
Place fish in the oven and bake for 15 – 20 minutes or until fish is cooked through.
