Fresh, young, approachable and adaptable describes Matthew Schnooberger’s culinary talents as well as his personality. Raised in the hill country of Texas, Matthew has grown his career at fine establishments in Texas and Santa Ana Pueblo, New Mexico.

After 10+ years in the industry, Matthew currently serves as Sous Chef at Hyatt Regency Tamaya. Embracing the Hyatt philosophy: “Food Thoughtfully Sourced. Carefully Served;” Matthew can often be seen out in the Tamaya gardens and orchard picking fresh herbs and produce for use in the day’s menu.

Trained at the Texas Culinary Academy, Matthew started his cooking profession at the luxury Hyatt Hill Country Resort. Since 2010, the 4-diamond Hyatt Regency Tamaya Resort and Spa has been home to Matthew, serving as the perfect venue for his culinary forte.

When not spending his time creating mouth-watering cuisine for his customers, Matthew enjoys brewing beer, camping in the great mountains of NM and creating mouthwatering Texas BBQ for family and friends.
