Chef Thomas Boquet 2026 Thibodaux Spahr's Seafood Chef Thomas Boquet is a proud native of Bourg, Louisiana, whose passion for cooking is deeply rooted in the traditions and natural resources of South Louisiana. For more than a century, the Boquet family has embraced the region's rich fishing, hunting, and culinary heritage, shaping Thomas's lifelong appreciation for Louisiana's unique food culture. His culinary journey began at an early age while accompanying his grandmother to the rectory of St. Francis de Sales Cathedral in Houma, where she prepared meals for priests, staff, and guests. Inspired by her dedication and love for hospitality, Thomas quickly developed a fascination with the kitchen. By the time he could reach the stovetop, he was already preparing family breakfasts and learning the fundamentals of cooking from his parents, both accomplished home cooks. In 1996, Thomas's family relocated to Dayton, Ohio, where he experienced firsthand how food traditions vary across different regions of the country. Missing the bold flavors of Louisiana cuisine sparked an even greater appreciation for his Cajun roots. During this time, renowned chef and storyteller Anthony Bourdain became a major influence, inspiring Thomas to explore the broader culinary world while remaining connected to the traditions of home. After moving to Nashville, Tennessee, in 2004, Thomas began his professional culinary career as a line cook. Encouraged by mentors who recognized his talent and dedication, he enrolled at the culinary program at The Art Institute of Nashville, where he refined his skills and committed fully to a career in the culinary arts. Over the years, Thomas has worked his way through virtually every position in the kitchen, learning from talented chefs and gaining experience across a wide range of culinary disciplines. In 2012, he returned to Louisiana to build his family and reconnect with the culture and lifestyle he cherished. Today, he is a devoted husband and father of three boys and remains deeply connected to the traditions that shaped him. Chef Boquet is especially grateful to the Spahr family for providing him the opportunity to continue his culinary career back home. Through his work, he celebrates Louisiana's rich seafood traditions, outdoor heritage, and the flavors that make the Bayou State unlike anywhere else in the world.
