Mac was born in Monroe, LA on December 1st 1984. He attended Jesus the Good Shepherd and St. Frederick Catholic High School in Monroe. He graduated from High School in 2003 and moved to Baton Rouge to study Construction Management at Louisiana State University.

Over the next few years, he started working in a handful of different restaurants. First would be a fry cook at Wendy’s fast-food chain in Jackson Hole, WY. Then a short stint serving tables at Logan’s Roadhouse in Baton Rouge. He eventually landed a cook job at Maxwell’s Market on Corporate BLVD in Baton Rouge. Here he trained under experienced chefs and truly found a love for cooking and the culture and pace of the restaurant kitchen. For this reason, he enrolled in Culinary School at LCI, Louisiana Culinary Institute in Baton Rouge.

 After graduating, Mac moved to Lafayette, LA and joined a kitchen staff that was being put together to open Jolie’s Louisiana Bistro, a restaurant named after the George Rodrigue painting, Jolie Blonde. He honed his skills here for the next few years before moving to Chattanooga, TN. There he landed his first Executive Chef position at Café on the Corner on Lookout Mountain.

In 2013, his first daughter was born and within a few years he made the decision to move back home to Monroe. He was hired in April 2016 as Executive Chef of the historic Warehouse No.1 Restaurant on the Ouachita River in Monroe and is still there today. Mac is married to his high school sweetheart for 15 years and they have two beautiful daughters, Elsie (10) and Mary Amelia (3).
