Chef Abby O’Sullivan is the chef behind Laundry Day Takeaway, a Vermont ghost kitchen and caterer celebrating Cajun and Creole dishes made with the world-class ingredients Vermont is known for — from internationally awarded cheeses to fresh, local meats and seasonal produce.

Abby grew up surrounded by good food and hustled in her single mother’s candy shops, wine stores, and bustling summer food booths across Vermont. Raised on Vermont cheddar and farm-to-table cooking, her love of food only deepened as she traveled the world and lived for years in New York City, New Orleans, and Los Angeles.

Before launching Laundry Day, Abby spent two decades as a costume designer in film. Wherever she went, she cooked — drawing inspiration from the ingredients, cultures, and chefs around her. Those years expanded her knowledge of regional food traditions and shaped the way she cooks today.

In 2024, she returned to Vermont full-time and launched Laundry Day Takeaway, pairing her love of Cajun and Creole flavors with the quality local ingredients she grew up on.

Today, Abby is honored to represent the state where she was raised — and Vermont’s vibrant community of farmers, makers, small businesses, and new Americans who have diversified the state’s food landscape and influence her dishes today — at The Great Seafood Cook-Off.
