Chef Wesley True 2015 The Spence Wesley True was born and raised in Mobile, Alabama, and attended the University of Mississippi in Oxford, Mississippi, where he was first interested in becoming a chef while working a pantry position at City Grocery. True pursued his culinary degree at the Culinary Institute of America in Hyde Park, New York. Upon graduating, True worked in some of the best kitchens in Manhattan—most notably the Danube, Bouley, Aquavit, Mesa Grill and Public Restaurant.
