Notes of Interest
This fish is a very primitive-looking fish like its close relative the escolar. It is also dark brown in coloration, but slightly less so than the escolar. Oilfish have a spiny skin as compared to the escolar’s smooth skin.

Both oilfish and escolar are produced as regular bycatch of the tuna longline fishery. Oilfish landings are steady at about 25,000 pounds per year in Louisiana.

The flesh of this fish is very oily and best used in grilled preparations. This high oil content makes this fish very resistant to overcooking. It reputedly has purgative properties, but has good demand in the marketplace.
