Ingredients

  • 32 fresh Louisiana oysters on half-shell
  • Cucumber Mignonette
  • 1/4 cup diced cucumber
  • 6 Tbsp. minced shallot
  • 1 cup rice wine vinegar
  • 1/2 tsp. ground white pepper
  • Traditional Mignonette
  • 3/4 cup minced shallot
  • 1 cup red wine vinegar
  • 1/2 tsp. ground white pepper
  • Green Apple Mignonette
  • 3/4 cup diced Granny Smith apple
  • 6 Tbsp. minced shallot
  • 1 cup Champagne vinegar
  • 1/2 tsp. ground white pepper

Directions

1.) Arrange oysters on a serving platter filled with crushed ice, and serve with Cucumber Mignonette, Traditional Mignonette, and Green Apple Mignonette, if desired.

Cucumber Mignonette

Makes About 2 Cups

1.) In a small bowl, add cucumber, shallot, vinegar, and pepper; whisk thoroughly. Cover, and refrigerate until ready to serve.
