Asian Tuna Stack
This was a bronze medal winning recipe at the 2010 New Orleans Wine and Food Experience's Grand Tasting event from Zea Restaurant.
1 cup soy sauce
1/2 cp water
2 tbl honey
1 tbl sugar
1 tbl minced garlic
2 tsp minced fresh ginger
1 tbl ground fresh chiles
3 tbl fresh basil
2 tbl chopped cilantro
2 tbl chopped green onion
2 tbl toasted sesame seeds
mix all ingreds in a bowl and set aside
1 pound Sashimi Grade Tuna - diced 1/4 "
1/2 pound Cucumber - diced
1/2 cup Tuna Marinade
Toss all ingredients and allow to marinate 10 mins.
In a 3" ring mold, layer the following:
Press gently to compact. Remove the ring mold.
Drizzle a tablespoon of the marinade over the stack.
Using a squeeze bottle, lace wasabi mayo (1 cup mayo/1 tbl wasabi powder) over the stack.
Serve with toasted tortilla triangle that have been brushed with the marinade.
