CANE RIVER COUNTRY SHRIMP

Ingredients:
1 pound medium size Louisiana shrimp (peeled and de-veined)
1 Tbsp. vegetable oil
1/2 cup button mushrooms - cut into halves
1 Tbsp. finely chopped garlic
1/2 cup heavy cream
1/3 cup crispy bacon crumbles
2 Tbsp. finely chopped parsley
Tabasco Pepper Sauce to taste
Salt and pepper to taste
1/2 shrimp bisque (see note)
Grit cakes (see recipe)

Saute the shrimp, mushrooms and garlic in hot oil for about one minute. Add cream and reduce (about 2 minutes). As cream reduces, add chopped bacon and parsley, add salt, pepper and Tabasco Pepper Sauce to taste. Finish with shrimp bisque, continue cooking 1 more minute. Serve over grit cakes (see recipe).
Note: Shrimp bisque recipes can be found in numerous books of Louisiana food. Locally, Langensteins Grocery carries prepared shrimp bisque.
