OYSTER
AND WILD RICE VELOUTE
Ingredients:
1/4
cup unsalted butter
1 tablespoon minced garlic
1 medium yellow onion
1 red bell pepper
2 stalks of celery
1/4 cup flour
1 cup chicken stock
1 bay leaf
1/2 teaspoon cayenne pepper
1/2 dashes Worcestershire sauce
1/2 cup heavy whipping cream
1/2 cup cooked wild rice
1/2 cup green onions
1 pint fresh Louisiana oysters, with their liquor

Serves: 6
1. Heat butter in a pot and add garlic, onion, pepper and celery.
Saute' until vegetables become tender. 2. Add flour and blend together
until smooth. Add chicken stock and oyster liquor from oysters. Season
with bay leaf, peppers and Worcestershire. Simmer for 15 minutes.
3. Add heavy cream and fresh Louisiana oysters and continue to simmer
for 5 minutes. 4. Add wild rice and green onions. Adjust seasoning
to taste and serve. |
